  • 16 ounces baby spinach
  • 12 ounces mozzarella cheese
  • 1/2 cup butter
  • 1/2 cup flour
  • 4 cups whole milk
  • 3 cloves garlic (pressed)
  • 16 ounces ricotta cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a microwave-safe bowl, wilt the spinach in short increments until just softened.
  4. In a saucepan, melt butter over medium heat; stir in flour to make a roux. Gradually whisk in milk until smooth and thickened.
  5. Add pressed garlic, salt, and pepper to the sauce; combine well.
  6. In a baking dish, layer sauce, noodles, spinach, mozzarella, and ricotta. Repeat layers until ingredients are used up.
  7. Finish with mozzarella and parmesan on top; cover with foil and bake for 25 minutes. Remove foil and bake uncovered for an additional 10 minutes until bubbly.
