  • 240g all-purpose flour (gluten-free optional)
  • 220g dairy-free block butter
  • 100g pumpkin puree
  • 50g maple syrup
  • 100g icing sugar
  • Ice-water
  • 2 tablespoons caster sugar
  • 1 teaspoon pumpkin spice
  • 1 & 1/2 teaspoons pumpkin spice
  • 2 teaspoons cornstarch

Instructions

  1. Prepare the dough by mixing flour, sugar, and pumpkin spice in a bowl. Add cold dairy-free butter and work until it resembles coarse crumbs. Gradually add ice water until a dough forms. Chill for 15 minutes.
  2. For the filling, mix pumpkin puree, additional pumpkin spice, maple syrup, and cornstarch until smooth.
  3. Roll out chilled dough to 1/4 inch thick; cut into rectangles. Place half on parchment-lined baking sheets, fill with pumpkin mixture, and top with remaining rectangles. Seal edges and poke holes for steam.
  4. Bake at 180°C (350°F) for 20-25 minutes until golden brown.
  5. For icing, whisk together icing sugar with dairy-free milk, maple syrup, pumpkin puree, and pumpkin spice; drizzle over cooled pop tarts.
