  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In separate bowls, cream together softened butter and sugars until light and fluffy. Add an egg and vanilla to each bowl, mixing well.
  3. Gradually incorporate the dry ingredients into each mixture until just combined.
  4. Chill both doughs in the refrigerator for 30 minutes.
  5. Scoop dough into balls and create wells in the center of each.
  6. Bake for 10–12 minutes until set but soft.
  7. Repress the wells after baking and let cool completely on a wire rack.
  8. Prepare ganache by pouring hot heavy cream over chopped chocolate; stir until smooth.
  9. Fill each cookie's center with ganache and decorate as desired.
