  • 1/2 cup graham cracker crumbs
  • 8 oz semi-sweet or dark chocolate (for coating)

Instructions

  1. In a bowl, mix mascarpone cheese, powdered sugar, vanilla extract, cooled espresso, and cocoa powder until smooth.
  2. Stir in graham cracker crumbs until well combined. Refrigerate for about an hour to firm up.
  3. Roll chilled mixture into 1-inch balls and place on a parchment-lined tray.
  4. Freeze truffles for 15-20 minutes to set.
  5. Melt chocolate until smooth; dip each truffle in melted chocolate and tap off excess.
