  • 2 Tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half
  • 1 rotisserie chicken (shredded)
  • 2 cans (15 oz) white kidney beans
  • 1 can (11 oz) white corn
  • 2 cans (4 oz) chopped green chilies
  • 2 Tbsp dried minced onion flakes
  • ¼ tsp garlic powder
  • 2 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups shredded pepper jack cheese

Instructions

  1. Melt butter in a Dutch oven over medium heat. Stir in flour and cook for about 2 minutes to form a roux.
  2. Gradually whisk in chicken broth and half-and-half until smooth, then bring to a boil for about 2 minutes.
  3. Add shredded chicken, beans, corn, green chilies, onion flakes, garlic powder, cumin, chili powder, salt, and black pepper. Stir well.
  4. Let the mixture simmer on low heat for 10 to 15 minutes while stirring occasionally.
  5. Add shredded cheese and stir until melted and creamy.
