  • 1 small yellow onion (diced)
  • 2 carrots (diced)
  • 2 celery ribs (diced)
  • 4 garlic cloves (minced)
  • 1 lb. ground beef
  • 6 oz. tomato paste
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 28 oz. fire roasted diced tomatoes
  • 1 1/2 cups beef broth
  • 1/3 cup heavy cream (or coconut milk for dairy-free)
  • 1 lb. rigatoni pasta (or pasta of choice)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté for about 8 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Push veggies aside and add ground beef. Cook until browned and no longer pink.
  3. Mix in oregano, basil, salt, black pepper, and red pepper flakes. Stir in tomato paste and cook for 2 minutes.
  4. Add fire-roasted diced tomatoes and beef broth; bring to a boil. Cover and simmer for 30 minutes.
  5. Stir in heavy cream before serving over cooked rigatoni pasta.
