  • 2 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 teaspoon Dijon mustard (optional)
  • Salt and black pepper, to taste
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Bring salted water to a boil in a large pot. Add cauliflower and cook for 5-6 minutes until tender but still firm. Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in warmed milk while stirring continuously until the sauce thickens (about 4-5 minutes).
  4. Stir in Dijon mustard (if using), nutmeg, salt, and pepper. Remove from heat and mix in cheddar and Parmesan until smooth.
  5. Preheat oven to 400°F (200°C). Place cauliflower in a baking dish and pour cheese sauce over it.
