  • 6 boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon crème fraîche (or soft cream cheese)
  • 2 tablespoons smoked paprika
  • Fresh sage and thyme leaves for garnish

Instructions

  1. Boil the eggs by placing them in a pot, covering them with water, and bringing it to a boil. Once boiling, cover the pot and turn off the heat. Let sit for 12 minutes before transferring to an ice bath.
  2. Once cooled, peel and halve the eggs lengthwise. Scoop out the yolks into a bowl.
  3. Add mayonnaise, Dijon mustard, lemon juice, crème fraîche, smoked paprika, salt, and pepper to the yolks. Mash until smooth.
  4. Spoon or pipe the filling back into the egg whites.
  5. Garnish with fresh sage and thyme before serving.
