  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • shredded lettuce
  • cheddar cheese
  • sour cream
  • salsa
  • guacamole
  • green onion

Instructions

  1. Preheat your oven to 400°F. Wash and dry the potatoes thoroughly, then poke holes in each one and wrap them in foil. Bake for about an hour until tender.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess grease, then add the taco seasoning and specified water amount. Simmer for about 10 minutes.
  3. Once cooled slightly, unwrap the potatoes and cut open the tops. Fill each potato with the seasoned ground beef mixture and top with shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and green onions.
