  • 3 bunches fresh parsley (approximately 34 cups chopped)
  • 1 bunch fresh mint leaves (approximately 1/2 cup chopped)
  • 1/2 cup green onions (thinly sliced)
  • 2 tomatoes (cored, seeded, and diced)
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Soak the bulgur in 4 cups of boiling water or vegetable broth for 15-30 minutes until softened. Drain excess liquid and let cool.
  2. Chop parsley and mint leaves finely, discarding thick stems.
  3. In a large bowl, combine cooled bulgur with parsley, mint, green onions, and diced tomatoes.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste.
  5. Pour dressing over the salad mixture and toss well to combine before serving.
