  • 1/4 cup pure maple syrup
  • 1/4 cup soy sauce
  • 1 tablespoon sriracha sauce

  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C). In a bowl, whisk maple syrup, soy sauce, sriracha, garlic, and chili flakes.
  2. Season chicken with salt and pepper; sear in olive oil over medium-high heat for 2-3 minutes on each side until golden.
  3. Place chicken in a baking dish, pour marinade over it, and bake for 20-25 minutes until cooked through (165°F internal temperature).
  4. Meanwhile, combine jasmine rice, coconut milk, chicken broth, and salt in a saucepan. Bring to boil; reduce heat and simmer covered for 18-20 minutes.
