Ingredients

  • Mini or Persian cucumbers
  • Green onion
  • Low-sodium soy sauce
  • Rice vinegar

Instructions

  1. Prepare the Cucumbers: Wash and dry the cucumbers. Cut off their ends. Place each cucumber between chopsticks to prevent cutting through, then slice at a 45° angle followed by 90° angle cuts for spirals. Cut in half and place in a mixing bowl.
