  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk (or your favorite plant-based milk)
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes. Boil in salted water for about 15 minutes until tender.
  3. Drain the potatoes and mash them with olive oil, almond milk, vanilla extract, cinnamon, nutmeg, and butter until smooth.
  4. In another bowl, mix brown sugar, maple syrup, spices, soaked raisins, vegan marshmallows, and chopped pecans.
  5. Spread the sweet potato mixture in a baking dish and top with the marshmallow-pecan mixture.
  6. Bake for approximately 90 minutes or until bubbly and golden brown. Let cool slightly before serving.
