  • 200 g whole milk
  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbsp unsalted butter (113 g)
  • Filling: 5 tbsp unsalted butter, ½ cup cane sugar, 2 tbsp cocoa powder, 1 cup semi-sweet chocolate chips

Instructions

  1. In a mixing bowl, combine milk and sourdough starter until mixed. Add cane sugar and the egg; mix well.
  2. In another bowl, whisk together bread flour and sea salt. Incorporate gradually into the wet mixture using a stand mixer until dough forms.
  3. Knead in unsalted butter until smooth.
  4. Transfer to a greased bowl, cover, and let rise for about 4 hours or until doubled in size.
  5. Prepare the filling by mixing butter, cane sugar, cocoa powder, and chocolate chips in a small bowl.
  6. Roll out the dough into a rectangle, spread with filling, roll up tightly from one long side, and cut into 12 pieces.
  7. Place on a lined baking sheet to rise for another hour before baking at 350°F (175°C) for about 30 minutes.
