  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup sour cream (full-fat)
  • Fresh chopped parsley (optional, to taste)

  1. Cut chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
  2. In a skillet over medium-high heat, heat olive oil and one tablespoon of butter. Sear the seasoned chicken for 5-6 minutes on each side until golden brown.
  3. Remove chicken from the skillet. Lower heat and add remaining butter with sliced onions. Sauté until softened (10-15 minutes).
  4. Add minced garlic and cook for an additional 30 seconds.
  5. Pour in chicken broth and scrape up any browned bits from the pan.
  6. Stir in sour cream until smooth and heated through.
  7. Return chicken to the skillet and spoon sauce over it before serving.
