Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and brown each side for about 4-5 minutes.
  3. Remove chicken from the skillet. Sauté onions and garlic until translucent (about 3 minutes).
  4. Add mushrooms and broccoli; cook for another 5 minutes until tender.
  5. Stir in rice and cook for an additional 2 minutes.
  6. Pour in chicken broth and heavy cream; mix well to create the sauce.
  7. Return chicken to the skillet, nestling it into the rice mixture.
  8. Transfer skillet to the oven; bake for 25-30 minutes until chicken is cooked through.
  9. Garnish with fresh parsley before serving.
