  • 2 pounds boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans fire roasted mild diced green chiles (4 oz each)
  • 2 cans cannellini beans, drained and rinsed (15.5 oz each)
  • 1 can pinto beans, drained and rinsed (15.5 oz)
  • 1 ½ cups frozen corn, thawed
  • ¾ block cream cheese (6 oz)
  • 1 ½ tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp chili powder
  • ½ tsp cayenne pepper
  • ½ tsp dried oregano
  • ½ tsp ground coriander

Instructions

  1. Place the chicken breasts in the bottom of a slow cooker.
  2. Season with cumin, salt, black pepper, chili powder, cayenne pepper, oregano, and coriander.
  3. Pour in the chicken broth along with the diced onions, minced garlic, and fire-roasted diced green chiles; add a bay leaf.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours. About two hours before it's done cooking, add the beans and corn.
  5. Once cooked, blend about two cups of chili until smooth to thicken the mixture.
  6. Shred the chicken using forks and return it to the pot; stir to combine.
