  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons Italian seasoning
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 3 cups bone broth (or chicken/beef broth)
  • 1 can crushed tomatoes (28 ounces)
  • 1 can petite diced tomatoes (15 ounces, undrained)
  • 1 cup shredded cheddar cheese
  • 8 ounces elbow macaroni (cooked)

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until cooked through. Transfer to a slow cooker.
  2. Add chopped onion, bell pepper, garlic, Italian seasoning, salt, black pepper, broth, and both types of tomatoes. Stir well.
  3. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  4. Once cooked, stir in shredded cheddar cheese until melted. Add cooked elbow macaroni and mix gently.
  5. Serve hot with crusty bread.
