  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Rinse shrimp under cold water and pat dry; season with salt and pepper.
  2. Wash and chop asparagus, slice bell pepper, rinse snap peas; mince garlic and ginger.
  3. In a bowl, mix soy sauce, cornstarch, and water to create the sauce.
  4. Heat vegetable oil in a skillet over medium-high heat; sauté garlic and ginger until fragrant (about 30 seconds).
  5. Add shrimp and cook until pink (2-3 minutes), then remove from pan.
  6. Stir-fry asparagus and bell pepper for 2-3 minutes until slightly softened.
  7. Add snap peas; continue stir-frying for another couple of minutes.
  8. Return shrimp to the pan, pour in the sauce mixture, and stir until everything is well coated.
  9. Cook for an additional minute or two until sauce thickens.
  10. Serve warm over rice or noodles; garnish with sesame seeds or green onions if desired.
