  • 250g dry paccheri pasta (or your favorite pasta shape)
  • 400g chicken or turkey sausage, crumbled
  • 2 shallots (or 1 small brown onion), diced
  • 1 tsp fennel seeds
  • 1 large lemon (zest and juice)
  • 12 tsp chili flakes
  • 2 cloves garlic, minced
  • 300 ml reserved pasta water
  • 70 g grated Parmesan cheese
  • 60 ml crème fraîche
  • Fresh parsley, chopped

Instructions

  1. In a large pan over high heat, cook the crumbled sausage until browned (10-12 minutes).
  2. Add shallots and fennel seeds; cook until softened (4-5 minutes).
  3. Meanwhile, boil water and cook pasta until al dente.
  4. Zest the lemon into the pan, add chili flakes and garlic; stir for one minute.
  5. Combine drained pasta with sausage mix, adding reserved pasta water, crème fraîche, and Parmesan; stir until creamy.
  6. Season to taste with more lemon juice and salt if necessary. Garnish with parsley before serving.
