- 250g dry paccheri pasta (or your favorite pasta shape)
- 400g chicken or turkey sausage, crumbled
- 2 shallots (or 1 small brown onion), diced
- 1 tsp fennel seeds
- 1 large lemon (zest and juice)
- 1–2 tsp chili flakes
- 2 cloves garlic, minced
- 300 ml reserved pasta water
- 70 g grated Parmesan cheese
- 60 ml crème fraîche
- Fresh parsley, chopped
- In a large pan over high heat, cook the crumbled sausage until browned (10-12 minutes).
- Add shallots and fennel seeds; cook until softened (4-5 minutes).
- Meanwhile, boil water and cook pasta until al dente.
- Zest the lemon into the pan, add chili flakes and garlic; stir for one minute.
- Combine drained pasta with sausage mix, adding reserved pasta water, crème fraîche, and Parmesan; stir until creamy.
- Season to taste with more lemon juice and salt if necessary. Garnish with parsley before serving.
