  • 3/4 cup powdered sugar for filling
  • 3 tbsp coconut or avocado oil for caramel
  • 1/4 cup almond butter for caramel
  • 1/4 cup + 2 tbsp maple syrup for caramel
  • Pinch of salt for caramel

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together oats, flour, baking soda, spices, and salt.
  3. In a separate bowl, cream together softened butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla; mix until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto parchment-lined baking sheets and bake for 10-12 minutes until edges are golden.
  6. Cool cookies on wire racks before making the cream filling by beating softened butter with powdered sugar and milk until fluffy.
  7. Prepare salted caramel by mixing melted coconut oil, almond butter, maple syrup, and salt in a bowl.
  8. Assemble cream pies by spreading filling on half of the cookies, adding salted caramel in the center, then topping with another cookie.
