  • 3 medium apples, peeled and diced
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter

  • 1 teaspoon sea salt
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan.
  3. In a bowl, beat cream cheese until smooth; add sugar gradually and mix well. Incorporate eggs one at a time, then add vanilla and sour cream.
  4. Pour filling over cooled crust; bake in a water bath for 55-65 minutes until set.
  5. Cool in the oven with the door ajar before chilling in the fridge for at least four hours.
  6. Sauté apples with butter, brown sugar, cinnamon, and nutmeg until soft.
  7. Prepare salted caramel by melting sugar until amber; stir in butter and cream, then add salt.
  8. Top chilled cheesecake with apples and drizzle with caramel before serving.
