Ingredients

Scale
  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet
  • 4 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  2. Season salmon with salt, pepper, and lemon juice. Heat olive oil in a skillet over medium heat; cook salmon for 4-5 minutes per side until cooked through. Remove from skillet and flake into bite-sized pieces.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add chopped spinach; cook for 2-3 minutes until wilted.
  4. Lower heat; add heavy cream and gradually stir in Parmesan cheese until melted and sauce thickens.
  5. Mix in lemon zest, lemon juice, and adjust seasoning. Toss in drained pasta until fully coated with sauce.
  6. Gently fold in flaked salmon before serving hot, garnished with fresh parsley.
