  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half-and-half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until golden brown.
  2. In a large pot, cover quartered potatoes with cold water, add salt, and bring to a boil. Cook for about 15 minutes until fork-tender.
  3. Drain potatoes and return them to the pot. Squeeze out roasted garlic cloves into the warm potatoes.
  4. In a small saucepan, gently warm half-and-half and butter until melted. Pour over the potatoes, adding salt and pepper to taste; mash until creamy yet slightly lumpy.
  5. Garnish with fresh herbs or extra butter if desired before serving hot.
