  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons mustard
  • ½ teaspoon salt (for dressing)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup if desired.
  2. Trim the stems and outer leaves of the Brussels sprouts, then rinse and pat dry.
  3. Toss the halved Brussels sprouts on the baking sheet with ½ tablespoon olive oil, ½ teaspoon salt, and black pepper until evenly coated.
  4. Roast for 20-25 minutes until charred outside and tender inside.
  5. In a jar or bowl, mix together the dressing ingredients: olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper. Shake or whisk until well combined.
  6. Serve the roasted Brussels sprouts on a platter drizzled with the dressing.
