  • 3 red beets
  • 3 golden beets
  • 6 carrots
  • olive oil
  • salt to taste
  • 3 tablespoons vinegar
  • 1 tablespoon honey
  • 1 garlic clove, crushed
  • 1 teaspoon minced rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the beets and carrots; cut tops off beets and halve them and carrots lengthwise.
  3. Toss vegetables with olive oil and salt in a bowl; spread in a single layer on a baking sheet.
  4. Roast for about 30 minutes until tender and slightly browned.
  5. Meanwhile, whisk together dressing ingredients: olive oil, vinegar, honey, crushed garlic, minced rosemary, and salt.
  6. Sauté beet greens in olive oil for about 2 minutes until wilted.
  7. Assemble salad by layering sautéed greens, roasted vegetables, and dollops of burrata; drizzle with dressing.
