Ingredients

Scale
  • 3 ¼ cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • ¾ cup warm milk (about 110°F)
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, softened
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons red food coloring
  • ½ cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons ground cinnamon
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk (add more if needed)
  • ½ teaspoon vanilla extract

Instructions

  1. Activate the yeast by mixing it with warm milk and sugar; let sit until foamy.
  2. In a bowl, combine flour, sugar, salt, cocoa powder, and food coloring. Add the yeast mixture along with butter, egg, and buttermilk; mix into a soft dough.
  3. Knead the dough on a floured surface for about 7–8 minutes until smooth and elastic.
  4. Let the dough rise in a greased bowl covered with a towel for about one hour until doubled in size.
  5. Prepare the filling by mixing brown sugar, granulated sugar, cocoa powder, and cinnamon.
  6. Roll out the dough into a rectangle; spread softened butter followed by the filling mixture.
  7. Roll tightly into a log and cut into equal slices.
  8. Place slices in a greased baking dish; let rise again for about 30–40 minutes.
  9. Preheat oven to 350°F (175°C) and bake for 20–25 minutes until golden.
  10. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth; drizzle over warm rolls.
