  • 200 g (7 oz) crumbled feta cheese
  • 3 tbsp capers or sliced black olives
  • 2 large cloves of garlic (sliced)
  • 1 red onion (thinly sliced)
  • Fresh rosemary sprig (torn)
  • 1 lemon (cut into quarters)
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F) and drizzle olive oil in a large skillet or roasting tray.
  2. Rinse and pierce the potatoes with a knife, then microwave them covered for 7-12 minutes until tender.
  3. Smash the cooked potatoes on the tray gently with a potato masher.
  4. Drizzle with olive oil, season with salt and pepper, add garlic, rosemary, and lemon wedges.
  5. Bake for about 10 minutes until golden.
