  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a greased 9×13-inch baking dish.
  2. Beat softened cream cheese in a separate bowl until smooth. Gradually add sugar, then mix in eggs one at a time. Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and flour if desired.
  3. Pour the filling over the crust and smooth it out. Bake for about 40 minutes until the edges are set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
