  • 2 cups freshly grated mozzarella cheese

Instructions

  2. In a skillet, heat olive oil over medium-low heat; add sliced onions with salt and pepper. Cook for 25–30 minutes until caramelized.
  3. In a bowl, mix ricotta cheese with pumpkin purée; season with salt and pepper. Spread this mixture across the pastry borders.
  4. Layer caramelized onions and mozzarella cheese over the ricotta mixture.
  5. Scatter fresh sage leaves on top and brush pastry edges with an egg wash (optional).
