  • 3 – 3 ¼ cups quinoa puffs
  • 1 ½ cups peanut butter
  • 6 tbsp hemp seeds
  • 1 tbsp vanilla extract
  • 2 tsp vanilla paste
  • 1/3 cup maple syrup
  • Pinch of salt
  • 1 cup + 2 tbsp dark chocolate chips (vegan)
  • 1 tbsp coconut oil

Instructions

  1. Prepare an 8×8 inch pan with parchment paper to prevent sticking.
  2. In a large bowl, mix together quinoa puffs, peanut butter, hemp seeds, vanilla extract, vanilla paste, maple syrup, and salt until well combined.
  3. Transfer the mixture to the prepared pan and press down firmly to compact it.
  4. Melt dark chocolate chips and coconut oil together in the microwave until smooth.
  5. Pour the melted chocolate over the pressed mixture and spread evenly. Refrigerate for about 10-15 minutes until firm.
