  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 1 cup carrots, diced
  • 2 celery stalks, chopped
  • 1 pound sausage (casing removed)
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 cups chicken broth
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons flour

Instructions

  1. In a large pot over medium heat, cook the sausage until browned (7-10 minutes). Remove and set aside.
  2. In the same pot, melt butter and sauté onion until softened (3-4 minutes). Add garlic and cook for another 30 seconds.
  3. Stir in carrots and celery; cook until slightly softened (3-4 minutes). Sprinkle flour and stir for 1-2 minutes.
  4. Slowly add chicken broth while stirring to avoid lumps. Add potatoes and seasonings; mix well.
  5. Bring to a boil then reduce to low heat. Cover and simmer until potatoes are tender (20-25 minutes).
  6. Return sausage to the pot; add heavy cream and milk. Stir until heated through.
  7. Taste and adjust seasoning as needed before serving.
