  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • 2 tablespoons maple syrup

  • 2 ½ cups chopped pecans (plus more for topping)
  • 6 oz semi-sweet chocolate
  • 1 tablespoon vegetable oil

Instructions

  1. Line a tray with parchment paper.
  2. Pulse graham crackers in a food processor until fine crumbs form.
  3. In a mixing bowl, combine melted butter, brown sugar, vanilla, cream, maple syrup, and salt; mix well.
  4. Fold in graham cracker crumbs and chopped pecans until fully combined.
  5. Scoop mixture into balls and place on the prepared tray.
  6. Freeze for at least 45 minutes to firm up.
  7. Melt chocolate with vegetable oil in the microwave until smooth.
  8. Coat each truffle in chocolate and sprinkle with chopped pecans before returning to the tray.
  9. Chill in the fridge until set.
