  • 2 ½ lb Beef Tenderloins
  • 1 ½ tbsp Avocado Oil
  • ¼ cup Yellow Onion (thinly sliced)
  • 3 Large Peaches (pitted, peeled, and diced)
  • â…“ cup Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tsp Fresh Rosemary (minced)
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 375℉.
  2. In a large skillet, heat avocado oil over high heat. Season beef tenderloin with salt and pepper and sear on all sides for 3-4 minutes until golden brown. Remove from skillet.
  3. In the same skillet, sauté onions and rosemary for about one minute until lightly golden.
  4. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches; mix well to create a glaze.
  5. Return beef to the skillet, coating it in the peach glaze. Bake in preheated oven for about 10 minutes or until the internal temperature reaches 145℉.
  6. Let rest for 5-10 minutes before slicing and serving.
