  • 1 lb turkey sausage or chicken sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup coconut milk or heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, heat olive oil and brown the turkey sausage until fully cooked. Remove from pot and set aside.
  2. In the same pot, sauté diced onion and minced garlic until soft and fragrant (about 3–4 minutes).
  3. Stir in drained diced tomatoes, chicken stock, dried basil, and oregano. Return the sausage to the pot and simmer for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (about 8–10 minutes).
  5. Lower the heat and stir in coconut milk and Parmesan cheese until melted.
  6. Season with salt and pepper to taste before garnishing with fresh parsley.
