  • 2/3 cup toasted pecans
  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon nutmeg
  • 1 cup water
  • 3/4 cup pumpkin puree
  • 1/4 cup honey

Instructions

  1. In a mixing bowl, combine flour, salt, yeast, spices, and toasted pecans.
  2. In another bowl, mix water, pumpkin puree, and honey until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until absorbed.
  4. Cover and let rise at room temperature for 8-10 hours.
  5. After rising, shape the dough into a ball on a floured surface and let it rise again for an hour.
  6. Preheat your oven to 450°F (230°C) with a cast iron pot inside for 30 minutes.
  7. Carefully place the dough in the hot pot using parchment paper and cover it. Bake for 30 minutes covered, then remove the lid and bake for an additional 15 minutes until golden brown.
  8. Let cool completely on a rack before slicing.
