  • 1.25 kg chicken wings (wingettes & drumettes)
  • 50g unsalted butter
  • 2 garlic cloves, crushed
  • 2 tbsp chopped coriander or parsley
  • 1.5 tbsp brown sugar
  • 2.5 tsp paprika
  • 1.5 tsp cooking salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • 0.25 tsp cayenne pepper

Instructions

  1. Preheat your oven to 200°C (400°F). Cut chicken wings into wingettes and drumettes if not pre-cut.
  2. Rinse wings under cold water and pat dry with paper towels.
  3. Melt butter in a saucepan over low heat; add crushed garlic and sauté until fragrant.
  4. In a bowl, mix brown sugar, paprika, salt, garlic powder, onion powder, black pepper, thyme, oregano, and cayenne pepper.
  5. Toss the wings in the melted garlic butter and spice mixture until evenly coated.
  6. Spread wings on a parchment-lined baking sheet in a single layer and bake for about 40-45 minutes, basting halfway through with remaining butter.
