  • 1 package refrigerated pie crust
  • 1 & 1/4 cup chopped pecans
  • 2/3 cup light corn syrup
  • 1/3 cup light brown sugar
  • 2 large eggs (lightly beaten)
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F.
  2. Roll out the pie crust into a circle and cut out circles with a cookie cutter.
  3. Fit the circles into a muffin tin.
  4. In a mixing bowl, whisk together corn syrup, brown sugar, melted butter, pecans, cinnamon (if using), and salt. Add eggs and mix well.
  5. Spoon the filling into each crust until about 2/3 full.
  6. Bake for approximately 20 minutes or until golden brown and puffed.
  7. Allow to cool before serving.
