  • 1 1/2 pounds lean ground beef (or ground turkey)
  • 2/3 cup panko bread crumbs
  • 1/2 cup chopped onion
  • 1 tablespoon barbecue sauce
  • 1 tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg (lightly beaten)
  • 1/3 cup light brown sugar
  • 1/2 cup ketchup
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix brown sugar, ketchup, dijon mustard, and nutmeg to create the sauce.
  3. In a large bowl, combine ground beef, breadcrumbs, onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and egg. Mix well.
  4. Fill a muffin tin with the meat mixture and pack it down firmly.
  5. Bake for about 15 minutes; then remove and add sauce over each mini loaf before returning to bake for an additional 10-15 minutes.
  6. Serve warm with mashed potatoes or your choice of sides.
