- 1 bag Nacho Cheese Doritos, crushed (save some whole for topping, if desired)
- 2 cups shredded cooked chicken or ground beef (browned and drained)
- 2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
- 1 can (10.75 oz) cream of chicken soup
- 1 can Rotel (diced tomatoes & green chilies), undrained
- ½ cup sour cream
- ½ cup milk
- ½ packet taco seasoning (or more to taste)
- Preheat oven to 350°F (175°C).
- In a large bowl, mix cream of chicken soup, Rotel (undrained), sour cream, milk, and half of the taco seasoning until well combined.
- Fold in shredded chicken or browned ground beef until evenly coated.
- Stir in 1½ cups of shredded cheese.
- In a greased 9×13-inch baking dish, layer half of the crushed Doritos, followed by the chicken mixture, then the remaining Doritos and cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until golden brown.
- Allow to cool for 5 minutes before serving.
