  • 1 bag Nacho Cheese Doritos, crushed (save some whole for topping, if desired)
  • 2 cups shredded cooked chicken or ground beef (browned and drained)
  • 2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can Rotel (diced tomatoes & green chilies), undrained
  • ½ cup sour cream
  • ½ cup milk
  • ½ packet taco seasoning (or more to taste)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cream of chicken soup, Rotel (undrained), sour cream, milk, and half of the taco seasoning until well combined.
  3. Fold in shredded chicken or browned ground beef until evenly coated.
  4. Stir in 1½ cups of shredded cheese.
  5. In a greased 9×13-inch baking dish, layer half of the crushed Doritos, followed by the chicken mixture, then the remaining Doritos and cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until golden brown.
  7. Allow to cool for 5 minutes before serving.
