  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ¼ cup fresh herbs (parsley or dill)
  • 1 cup Greek yogurt (or coconut yogurt for dairy-free)
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh dill (chopped)

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper. Chill in the fridge.
  3. Whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper for the vinaigrette.
  4. Heat a skillet over medium-high heat and sear the marinated steak for about 4-5 minutes on each side until desired doneness. Let it rest before slicing.
  5. Assemble your bowl with grains as the base followed by sliced steak, cherry tomatoes, diced cucumber, red onion, olives (if using), fresh herbs, and a generous scoop of tzatziki sauce.
