  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 1 can (14 oz) artichoke hearts (drained and quartered)
  • 1/2 cup pitted green olives (halved)
  • 1/2 cup chicken broth
  • 1/2 red onion (sliced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. In a large ovenproof skillet over medium-high heat, warm olive oil and sear chicken for 3-4 minutes on each side until golden brown.
  4. Remove chicken from skillet; sauté sliced red onion and minced garlic in the same skillet for about 2 minutes.
  5. Add artichoke hearts and green olives; cook for another couple of minutes.
  6. Pour in chicken broth along with lemon juice and zest; bring to a simmer.
  7. Return chicken to the skillet; spoon sauce over each breast.
  8. Bake in the preheated oven for about 20-25 minutes or until the chicken is no longer pink inside.
  9. Garnish with fresh parsley before serving.
