  • 175g softened butter
  • 175g light brown soft sugar
  • 3 large eggs
  • 175g self-raising flour
  • 2 tsp ground mixed spice
  • 115g mixed dried fruit
  • 2 tbsp apple juice or orange juice
  • 115g icing sugar
  • 12 tbsp warm water

Instructions

  1. Preheat oven to the appropriate temperature and grease a 12-hole muffin tray.
  2. In a large bowl, beat softened butter and light brown sugar until fluffy. Add eggs one at a time, followed by self-raising flour and mixed spice.
  3. Gently fold in mixed dried fruit and apple/orange juice.
  4. Spoon batter into muffin holes until three-quarters full. Bake for 25-30 minutes until golden brown.
  5. Cool on a wire rack before icing with a mixture of icing sugar and warm water. Top with glacé cherries and icing holly leaves.
