  • 2 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 cans (15 oz) butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream (can substitute half-and-half)
  • ½ cup grated parmesan
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan over medium heat, melt 2 tablespoons of unsalted butter. Add 4 cloves of minced garlic, ½ teaspoon each of salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ teaspoon ground black pepper. Sauté for about 2 minutes until fragrant.
  2. Stir in ½ cup chopped sun-dried tomatoes and ½ cup vegetable broth. Add 2 cans (15 oz each) drained butter beans and cook uncovered for about 5 minutes to meld flavors.
  3. Remove from heat and fold in 1 cup chopped fresh spinach until wilted. Mix in 1 cup heavy cream and ½ cup grated parmesan cheese along with 2 tablespoons chopped fresh basil. Serve warm.
