  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • 4 slices cooked chicken breast (e.g., honey or Virginia)
  • 48 slices Swiss cheese
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap; pound to about ½ inch thick. Season with salt and pepper.
  3. Set up a breading station: flour in one dish, beaten eggs in another, panko breadcrumbs mixed with garlic powder and paprika in the last.
  4. Dredge each chicken breast in flour, dip in egg wash, then coat with panko breadcrumbs.
  5. Heat oil in a skillet over medium-high heat; cook chicken until golden brown on both sides (about 4-5 minutes per side) or bake on a greased sheet until cooked through.
  6. Layer each piece with chicken breast slices and top with Swiss cheese. Broil briefly until cheese is melted.
