  • 4 large russet potatoes
  • 1 pound ground beef
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 6 slices cooked and crumbled turkey bacon
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and wash the russet potatoes. Pierce them with a fork.
  2. Bake the potatoes for about 45-60 minutes until tender.
  3. While the potatoes bake, cook the ground beef in a skillet over medium heat until browned, then drain excess grease.
  4. Add chopped onion and green bell pepper to the skillet; cook until softened. Stir in BBQ sauce, garlic powder, onion powder, salt, and pepper.
  5. Once the potatoes are baked, cut them in half lengthwise and scoop out some flesh for filling.
  6. Fill each potato half with the beef mixture, top with turkey bacon and cheese, then return to the oven for 5-7 minutes until cheese is melted.
