  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour (additional)
  • 1/2 tsp baking powder
  • 1/4 cup fresh lemon juice
  • 1/4 cup shredded coconut (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together 1 cup of flour and powdered sugar until well combined.
  3. In another bowl, cream the cold cubed butter with granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the fresh lemon juice.
  5. Gently fold in the dry ingredients along with additional flour, baking powder, and shredded coconut until just combined.
