  • 3/4 cup Cake Flour
  • 1 tsp Corn Starch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Cold Unsalted Butter (cubed)
  • 1/2 cup Light Brown Sugar (packed)
  • 1/4 cup White Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 cups Milk Chocolate Chips

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer with a paddle attachment, cream cold butter until softened. Add brown sugar and white sugar, mixing until fluffy.
  4. Add egg and yolk; blend until combined.
  5. Gradually mix in dry ingredients until just combined. Fold in chocolate chips.
  6. Shape dough into six large balls (about 5.7 oz each) without flattening them.
  7. Place on lined cookie sheets with space between each cookie and bake for 10-12 minutes until golden brown.
  8. Let cool on the sheet for at least 15 minutes before transferring to a cooling rack.
