Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8-inch square baking pan or cast-iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and baking soda.
  3. In another bowl, combine the buttermilk, eggs, and melted butter.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the cheddar cheese, corn kernels, and chopped jalapeños.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake in the preheated oven for 25–30 minutes until golden brown and a toothpick comes out clean.
