  • 2 cups water or chicken broth
  • 1 onion (diced)
  • 2 (15 oz) cans black beans (drained)
  • 15 oz creamed corn (with juices)
  • 1 cup salsa
  • 2 small diced jalapeños
  • 1 tsp chili powder
  • 1/3 cup creamy ranch dressing
  • 4 oz cream cheese (cut into fours)

Instructions

  1. Gather and prepare all ingredients.
  2. Set your Instant Pot to sauté mode. Add a splash of water and sauté diced onion and jalapeños until soft.
  3. Add chicken breasts, water or broth, and salt; close the lid and cook on high pressure for 25 minutes.
  4. Release pressure, shred chicken with forks, and return to the pot.
  5. Stir in black beans, creamed corn, salsa, chili powder, ranch dressing, and cream cheese.
  6. Close the lid again and cook on high pressure for another 10 minutes.
